Jalapeno Boats

Ingredients

  • 1/2 cup frozen whole-kernel corn, thawed
  • 1/2 cup (4 ounces) 1/3-less-fat cream cheese, softened
  • 1 tblsp chopped green onions
  • 2 teaspoons chopped fresh cilantro
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon salt
  • 6 large jalapeno peppers, halved lengthwise and seeded

Instructions

  1. Combine first 6 ingredients in a small bowl.
  2. Spoon about 1 tablespoon cream cheese mixture evenly into each jalapeno half.
